Yogurt Chicken

In the quest of healthy recipes, I did an internet search for chicken recipes. I found an amazing recipe that is sort of like friend chicken but healthier.  I tried it with skepticism and it is now firmly lodged in my recipe repetoire! 



This was a great meal - beans from my garden, yogurt chicken, and mushrooms (sauteed in canola oil). 

Yogurt Chicken

Ingredients
4 boneless, skinless chicken breasts
1 C plain yogurt
2 T lemon juice (or the juice of 1 lemon)
1 C dried bread crumbs, cracker crumbs or crushed cornflakes
1/2-1 t garlic powder
salt to and pepper to taste
dried parsley

Preheat oven to 350 degrees F (175 degrees C).

1. Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.)

2. In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.

3. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).

4. Place coated chicken on a rack in a 9x13 baking dish. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.
