ANZAC Bikkies

This weekend's baking adventure is a traditional Australian biscuit (cookie in American lingo!). I heard about these while watching an Australian movie. I then did some research on the Internet to find out what this term means. ANZAC stands for Australia New Zealand Army Corps. During WWI the women down under wanted to find a way to send their loved ones serving in the war treats. The problem was that a traditional cookie or cake has ingredients in it that spoil in the transit to the front. So the women began experimenting with recipes that could stand the test of time and travel. Out of this was born the ANZAC biscuit which is now a stable in Australian baking. They are often used for fundraisers for the veterans associations.

When finished they are a golden brown and a bit crunchy.

Ingredients

1 C flour
1 C sugar
1 C rolled oats
1 C desiccated coconut
1/2 C butter
2 T boiling water
1 T golden syrup (not sure what the American equivalent is)
1 t baking soda (add a little water if mixture is too dry)

Directions
1. Preheat oven to 180 degrees Celsius (or approx 375 degrees F).
2. Grease a biscuit tray or line with baking paper.
3. In a large bowl, combine all the dry ingredients.
4. In a small saucepan over a medium heat (or in a microwave proof jug or bowl in the microwave), combine the butter and golden syrup until the butter has melted.
5. In a small bowl, combine the boiling water and bicarbonate of soda.
6. Add the bicarb and water mixture with the melted butter and golden syrup.
7. Combine all ingredients in a large bowl.
8. Mix thoroughly.
9. Dollop teaspoonfuls of the biscuit mixture onto the greased baking tray. Don't forget that the biscuits WILL spread during baking, so make sure you leave room for them to spread!
10. Bake for 10 minutes, or until golden brown.
11. Remove from oven.
12. Allow the Anzac biscuits to cool on the tray for a few minutes before removing to a cooling rack.

I added mini M&Ms to mine which appalled my Australians friends but everything is better with some chocolate in it!
